The version of Ubuntu they chose is an LTS release - Long Term Support.
Fedora, the Red Hat product comparable to Ubuntu, only has a six month
life cycle and maybe a year max support lifetime. Red Hat Enterprise
Linux could have been used; it has a 5 year support lifetime but it's
very expensive. So my guess is they picked based on the need for a zero
cost, long term distro with high name recognition. I'd have picked
CentOS but it doesn't have the name recognition Ubuntu has.
Another advantage Ubuntu has is a big organization with a lot of money
behind it, just in case somebody needs to file a giant lawsuit down the
road somewhere. ;)
