Jeff,
I am no Linux expert but you should have no problem with your setup. I
still use fat32 for shared hdd but ntfs is supposedly stable with
read-write now. If you want to read EXT2 and EXT3 in Windows you can
install EX2fs: http://www.fs-driver.org/ and it shows up in your
windows file system.
If you use Thunderbird for mail, a neat trick is to share the same
folders with your Linux and Windows installations.
