Wouldn't it be a relatively simple task to take your initial GPS readings
and then use that to calculate the relative locations of the other way
points given direction and heading?  If the course is defined in a
particular way I'd assume part of the challenge would be to adapt your robot
to meet the criteria. 

Its just a thought.

Cool.

Martin, I noticed you were considering defining the course
waypoints as heading and distance rather than as the more
normal latitude/longitude.  I'm not sure what the reasoning
behaing this is, but I would encourage the latter rather
than the former as being more useful.

I have an averaging GPS we can use if that is the problem.
